Moong Dal Salad (peeled split yellow moong beans)




Ingredients
Quantity
Moong dal
100 gms (1/2 cup)
Carrots
2 medium
Cucumber
1 large or 2 medium
Coriander
A handful
Green chili time
1 small finely chopped
Asafoetida (hing)
A pinch
Salt
As per taste
Olive oil
1 tsp
As dash of lime juice

Serves 4 as a salad
Preparation time - 15 minutes (1 hour soaking time)
Cooking time - 5 minutes

Method:
  • Rinse moong dal in cold water, add 1 ½cup of water to the dal and let it soak for an hour minimum.
  • Meanwhile, wash-dry the carrots and cucumber, grate both, add finely chopped coriander and set aside in a large bowl.
  • After an hour, drain the moong dal set aside.
  • Take a non-stick pan add 1 tsp of olive oil (or regular oil), a pinch of asafoetida (hing), mustard seeds, let them splutter.
  • Then add finely chopped green chili, and the drained moon dal, sauté for 2 minutes.
  • Remove from heat and let it cool, once cooled add the dal to the carrots, cucumber mixture.
  • Adjust the seasoning as per taste with salt and lime juice.
  • Serve!
